Rajasthan Dish - Fried Rice Recipe

Fried rice(Indian style)


Rice- 250gm (washed and soaked for 2 hours)
Water- 500ml(for close pan cooking), 625ml(for open cooking)
Clove- 2 medium size
Onion- 1 big
Tomato- 2 medium sized
Yellow Capsicum- 1 medium sized
French beans- 9-10 piece
Salt- 1 tsp
Red pepper powder- ½ tsp
Asafetida- 2 pinches
Oil- 1 tbsp
Coriander powder- 1 tsp
Garam masala- ½ tsp.
Green coriander- 2 tbsp(picked and finely chopped)

Boil the soaked rice in a pressure cooker or open pan (according to the measurements mentioned above). Keep aside the boiled rice to cool down.

Chop all the vegetables finely. Heat oil in a karahi , put asafetida and clove. Add finely chopped onions. When onions become soft, add all the vegetables. After cooking these vegetables for 2 minutes, add cooled rice and put all the spices. Stir lightly. Do not cover the lid and let it cook for 3 minutes. Sprinkle fresh coriander and serve hot.

Nutritional value:
1. very low amount of oil is used.
2. can be prepared in 5 minutes(rice can be boiled in advance)
3. vegetables of almost all the colors are used.
4. serves as a good snack.
