Recipe of Mixed vegetable curry

Ingredients

Tamarind pulp- 3 table spoons
besan- 150gm
green chilli-1
ginger- small piece
Mixed vegetables like potato,ladies finger,bringal,lotus stem,peas,carrot-200gm
cumin seed- 1 teaspoon
methi seed- 1/2 spoon
hing- little
salt- 1 spoon
curry leaves- few
oil-2 table spoons

Method
Cut all the vegetables into big pieces. Stir and fry them in oil for 5 minutes. Put a teaspoon of oil in a pan and add hing,curry leaves,methi seed and cumin seed, then fry. Add 6 cups of water , salt, green chilli, ginger,tamarind pulp and cook till 2-3 boils are obtained, now add fried vegetables and cook untill the vegetables become tender.

This curry is very good combination for roti and chappati and very nutritious too.
